    Thank you! I enjoyed the video and now I want a powder coat steel knife. I did want to ask a question about German steel knives. I bought a preowned offset cheese knife on eBay where I have purchased many new knives (mostly new) and done quite well and they seemed like authentic knives and much like my factory purchased ones. This one seemed off. When I compared it to the knives I already owned it seemed a warmer color steel (more golden than blue) and the other German knives (various brands mostly Henckels) seemed cooler and brighter. When I talk about this color difference it was very subtle but definitely there. Something like the difference between the color of 18k white gold and platinum. I bought the exact knife (bigger though) from the company and compared it and again the steel looks much warmer (more toward golden silver than blue silver) on the eBay knife than the one that was from the company. Still the seller insisted it was authentic. The seller had described it as a 10" blade when it was a 5" blade so on that alone I got it returned. Is German steel cooler (brighter bluer silver than golden) than a cheaper steel? Oh in addition the knife just felt cheap in your hand and it wouldn't cut at all. We didn't sharpen it because we didn't want him to claim we changed the knife or anything. The knife in question had horizontal striations on the spine that were unique to the factory purchased knife.

      Hey Pippadawg, you ask a great question! There are container loads of counterfeit knives landing on our shores every day. The box, label and paperwork with the knife can be exactly the same as a knife from the desired manufacturer but the knife itself will not possess the same materials or manufacturing process. In other words, it will all look great but the knife is trash. Always purchase your cutlery from an authorized dealer. You can contact the manufacturer, who's knives you want, and confirm that the dealer is authorized. Why not just buy direct from the manufacturer? Many (though not all) manufacturers sell their knives at MSRP. Dealers sell their knives at retail (MAP if set by the mfg). You might get better pricing from a dealer, and perhaps better customer service. Now, about powder steel. It is not powder coating. They are two different things. Powder steel is a relatively new way of making steel for production knives. Without going deep into the weeds, it's just better. Better edge retention and toughness. More expensive but generally worth it. We are just beginning to see more powder steel in culinary knives. It's revolutionized sporting knives for years now. If you are looking for great used knives, I would become well versed in one brand or two and learn what to look for. The more you know the less likely you are to get ripped off. I would also focus your search in your nearest city. It's much easier to buy a used knife if you can hold it and really see if it is the real thing. Buy online at your own risk. Lastly, let's talk about steel color. Unless the manufacturer changes their process, the color of the steel should be the same. There are some things that can change the color of the steel but I wouldn't expect it to be a common occurrence. At the end of the day, a knife is as a knife does. Toughness, edge retention, sharpenability and corrosion resistance are the four properties we use to compare one knife steel to another. If the knife performs well for you, then it was a good acquisition. I hope this answers your questions. Thanks again for your comment. ...Richard

      I am certainly not the defender of all things Case, but most of the Chinese brands of traditional folders are not good. At least with Case, you know that the steel they say they use is the steel they use. And since this video was made, Case has begun making some traditional folders in much higher end steels, including powder steel. When you can get them. And their pricing is reasonable.     Hi Richard, I have no problem with Chinese people (I'm married to one), and both of my kids are 1/2 Chinese, but I (personally) just try to not buy ANY knives from China because of the Communist Government and a great deal of the manufacturing in China - with ALL the unethical things they do! I also do my best to avoid 'Made in China' products in general, but it can be hard. I have an extensive knife collection, so this is one area I make a particular stand. I just want to keep as few of my dollars from going to China as possible, because I don't want to make that country any more powerful than it already is. In addition to their goals of world domination, all the intellectual theft and imitation products that come out of China really bother me. Time after time, you hear stories about Chinese manufactures doing horrible things like putting lead paint on children's toys, using fillers in food like cardboard, etc. I just DON'T TRUST them because there seems to be no moral compass. Again, I don't mean individual Chinese people, I mean China's government and manufacturing in general. I agree with you that there are some really nice knives coming out of China now, like some of the brands you mentioned, but I choose to buy American made knives as much as possible. There are so many AWESOME knives coming out of America, so I don't see the need to spend even $1 on a knife made in China. I do buy from Lionsteel (Italy), and I don't mind buying quality knives made in Japan or Taiwan (especially Spyderco's!). I understand you have a business, and I'm not criticizing what you are saying - just saying where I stand personally. I like your channel and will continue to check out your videos. Anyway, I pray that God will ABUNDANTLY BLESS your business more than you can even ask or even think! Take care bro!

      Hey Steven, I completely understand you taking a stand against the CCP. I agree that they are a curse upon the people of China. These days, most governments are a curse on their people, including the US. Corruption in government seems to be the norm these days. Bleeding the people of each nation of their freedom and their hard earned incomes. Of course there are different levels of abuse and injustice. And some governments just hide their distain for their own people better. That being said, it is hard to punish a company for the actions of their government. We carry knives from many different countries. But I am proud to say that many of our best selling brands on bcknife.com are US made. Companies like White River, Silver Stag, ProTech, Boardertown Blades, Lamson, Santa Fe Stoneworks, Tops Knives and others are all excellent brands that we are honored to stock for your perusal. Having done this for a good bit, I can tell you that you are not alone. Many of my customers will not buy from China. Perhaps one day, enough people will make a stand as you have and we can dispense with the China products altogether and bring that manufacturing back to the US.     Hi Richard, Great commentary! I like your honesty. There are a lot of people who are CASE KNIFE FANATICS/COLLECTORS and would not be willing to even listen to what you're saying. NEVERTHELESS, what you're saying needed to be said, and I hope someone from Case Knives watches this. This is how capitalism works! If Case wants to compete with so many other knife manufactures, they need to keep up with modern advances in steel quality. I think there are probably a lot of people who love Case Knives AND would be willing to spend more for a better steel. I'm a knife collector (and user), and I don't want to waste my time and money on cheap, low-quality knives. I love the tradition, function and beautiful designs of Case Knives, but the reason I don't have ANY is exactly what you're saying here. Instead, I previously bought a Benchmade Proper (slipjoint) in S30V with OD Green Micarta scales, and, today, I just ordered a Lionsteel Roundhead Barlow (slipjoint) in M390 steel with ram horn scales. You also gave a great breakdown/commentary on different knife steels as well. Thank you, I just subscribed to your channel. 😊👍

I am pleased to inform that Case has listened and is now producing some limited runs in better steel. Traditional models in powder steel, and they are very nice with a reasonable price. Buck started moving in this direction several years ago. I am not yet a direct dealer with Case but if they keep going in this direction I'll need to speak with them again.       A lot of folks make honing oil. We carry some from Lansky and Norton. But really, any will do as long as it's honing oil. It's not expensive and it is made for the task.

    OK, Subscribed. And, i turned 60 two months ago. For what it's worth. I only found out about Case Kitchen Knives a few hours ago. Look at what they had, and it brought me back to my childhood. Styles of knives my favorite grandmother had, one of their Paring Knives was one I used habitually as a kid when making grilled cheese sandwiches. A shame to hear about the poor quality of the stainless steel they use. Guess I'll pass on getting anything from them.

      Hold on Jonny! This video was posted two years ago. In that time, Case listened. They now produce several traditional knives in the better steels. We get them in our store when we can. Their QC is not the best but at their price, it's good enough. They are not a custom knife but a production folder, made in the USA.     Shun is like a Bentley, expensive to maintain, quirky, and sexy as hell. Sure, you have to be careful with them. I have three sets and boy do they cut and keep their edge. Got a few chips learning how to use them. I'm a fan.

      Raw materials and labor are increasing significantly but I think many companies are taking advantage of the recent inflation and the public's perception of increasing prices to gobble up more margin. I'm not sure if Spyderco is guilty of this but other companies certainly are. At the end of the day, the market and competition will correct these issues. The beauty of a free market system is that it should eventually self correct. We'll see...

    Their qc has really hit the floor, i have a trapper from 2013 and a cheetah from 2003, the cheetah is a harder steel, i handled some new ones, the trapper is better, the cheetah is night and day difference I dont know if they just changed the steel or if they changed the heat treat or what, but on the new ones, i have to agree

    I recently bought a 1200 grit diamond plate. It's great, but I felt like I wasn't getting as fine an edge as when I used my hard arkansas stone, which is advertized as being equivalent to around 1000 grit. I thought I was crazy until I tested it. After testing it, I did some research, and went down the rabbit hole. Long story short, I've started collecting more arkansas stones.

    Zwilling owns a bunch of exclusive brands - Demeyere, Miyabi, Staub, all independently run without interference - so "their" Japanese knives are actually Miyabi knives. But they also have their own brand of Zwilling knives.

    Fun Fact for you all: There is a Global Alloy Shortage that is driving the prices up for material and tool steels to machine these knives. The Biden Sanctions against Russia is the final nail in the coffin for US Production. Here let me rub my crystal ball and make a very astute prediction… The next video's you will see all over UA-cam will be “hey what’s up with the knife shortages!” People are clueless as to what is driving the "current alloy shortages" which will begin to affect all knife manufacturer’s WORLDWIDE any day now. As soon as they can’t get any more blade stock or high speed tooling to machine with due to sanctions -they will all dry up. Yes You voted for it! Everyone had better start backing US President Trump or you can kiss your new knife selections goodbye.

      Perhaps, but it still doesn't hold an edge well at all. Thankfully, Buck is now making an number of models in higher end steels with much better edge retention. Very impressive Buck!

    I realize this is an older video, but I'm going to toss in 2¢. Pete at Cedric and Ada checked the steels when he compared Case's true sharp with their CV steel. He said Case uses Latrope (sp?) 420HC for their true sharp stainless steel knives. When he did his testing, he found that while the CV steel stayed sharper a little longer, there really wasn't much difference between how long the true sharp stayed sharp and how long the CV steel stayed sharp. He mainly attributed that to the fact the CV was only hardened to 55 HRC. I checked a few sources online and it looks like the true sharp runs around 56HRC. So similar hardness, for similar results. As for why Case uses soft steels in their knives, I suspect it is the same reason that Victorninox also uses soft steel (X55CrMo14 or DIN 1.4110 at 56 HRC). That being mainly ease of sharpening. I'm sure toughness (IE the thin traditional blades not being brittle and prone to chipping, cracking, snapping) plays a part too. But given that the average person usually doesn't know how to sharpen a knife (well if at all) anymore they opt for a soft steel to make the sharpening process as easy as possible, especially with something like a tungsten carbide pull through sharpener. As for whether the steels Case/Victorinox/Rough Rider/Schrade/etc... use on their traditional knives are good enough... IMO yes. Traditional knives tend to have thin blades and cut well. With soft steels they're easy to sharpen. And for most people they tend to hold an edge well enough to handle most basic tasks.

      Excellent excellent comment!!! I actually have a great affinity for Case Knives. I carried and used them extensively, especially before becoming the owner of Bear Claw. That being said, you and Pete are absolutely correct. My impression (impression only) has always been that the carbon steel held an edge slightly better than the stainless. Also, the carbon steel is easier to sharpen than the stainless. Both steels are relatively soft but that has been my experience. My point was that for the money, I want a better steel with better edge retention. Now you're right, this video is dated as it was made two years ago. In that time, knife prices have increased dramatically. Still, I want to carry Case traditional knives in a better steel. Thankfully, during the last two years, Case has begun to manufacture a number of models in these higher end steels. And the pricing is not bad. I'm not a direct Case dealer but if Case continues to move in this direction, I will be. Buck is in the process of doing the same thing. They are now producing many excellent models in better high end steels and it's because of that, we have become a direct dealer with them. These legacy knife manufacturers must continue to innovate and update their lines to reflect newer materials and compete with other newer companies that recognize their opportunity to capture market share.     I can swear by Messermeister knives... when i was investing in a block, I researched the heck out of knife companies and settled on their Royal Elite for my paring, chef, bread knives, and steel. They are great. Currently in the market for a 10" Chef from Messermeister.

    Knives are great tools & people like to buy American. In some ways Case is cashing in on the collecting hobbie. I think the economy is going south & some collectors will have to liquidate part of their collections. Only buy what you can offord.

      Case has always said that they are the most collected knife in the world. Also, the steel might not hold a decent edge but it is perfect for collectors. It'll stay shinny.

    You may find this as a surprise, but everyone how the like and subscribe thing works. Personally, I never like or subscribe to beggars. And that's exactly what you did. Things are tough all over. No need for you to act like your special in seeking financial support. If you find your chosen path to be too expensive, perhaps you're on the wrong path.

      I understand your argument Grudge. Unfortunately, the cost of making these videos necessitates my reminding folks to support our efforts in making them. I enjoy doing this. I believe that videos like mine and others help to bring awareness and business to knifemakers everywhere. Some of my videos document the legends in our business that few outside our thing have heard of. One of my goals is to help (in my small way) expand the knife market and push back on the demonization of knives. The reality, though, is that it costs tens of thousands of dollars to do this each year and we have, to date, made nothing from our efforts. Did you enjoy our content? Did you watch the video? Do you watch other content on UA-cam? All the best content that you consume costs a great deal to make. These costs are support, in part, by people like you giving us a simple thumbs up and Subscribing. If, by some miracle, this channel actually grows larger, there will be other sources of revenue that will offset the cost of production.     What kind of sharpening stone use in cockfighting knife sir'

      It depends on the type of spur. Some use a curved knife while others use a curved round spur, almost like a miniature ice pick. A professional sharpener will use a small buffer with shaped felt or paper wheels and compound. For stones, I would suggest a rod for the inside curve of the knife and a flat stone for the ice pick spur. The AC-4 that we carry at Bear Claw (bcknife.com) is a good option for touching up the knives. You might also purchase a hard Arkansas stone and round one edge with a diamond flattening stone. Unfortunately, we can no longer sharpen cockfighting knives in our store. I hope this helped Ryan.

    I like the old case knives carbon steel in the 50s to 70s i talked to a truck driver he delivers every 2 weeks to frosr cutey and the boxes say case but they got China on the boxes

      I am not privy to any china knives coming into case, but that doesn't mean it's not happening. Everyone is looking for ways to stay in business, much less maximize profits.       I like Benchmade. I stocked them in my store for several years. Unfortunately, we had a falling out back in 2012 and I discontinued them. Since then, they have had some issues on the business side. Though the knives are not the best, for the price they are still worth it. They use some great blade steels but you should evaluate each model on it's own merits. Don't buy anything they make with a D2. I hope that, in the future, we can resolve our differences and stock their products again. I have no doubt they would again be one of our best selling brands. Not because of their quality but because of their marketing. The Benchmade name still carries weight. If you like Benchmade, go for it. You could do a lot worse. ...Richard

    If you look at the overall picture the case company is fighting it in this economy so I don’t know if they can do a very high in steel price wise but in the 70s the big Buck was 440c I definitely believe they could afford that edge wise would be an important over what they are putting out now , I have some 440 c knives they hold up about 3 or 4 times over 420hc

      I would certainly like 440C better than 420HC. However, with the advent of all these new knife steels over the last 20 years, I would hope they could do better than that. For the price, I'd like to see a VG-10 at least. Just my humble opinion. Hey, thanks for your comment Edward!!!
